RecipePreparation time: 30 minutes Marinating time: 2 hours Grilling time: 15 minutes Total time: 2 hours 45 minutes

Ingredients:

For the marinade:

  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon grated lemon zest
  • 1 teaspoon grated lime zest
  • 1 teaspoon grated orange zest
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the skewers:

  • 6 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 12 cherry tomatoes
  • Wooden skewers, soaked in water for 30 minutes

    Instructions:

    1. In a medium bowl, whisk together all the marinade ingredients until well combined. Set aside.
    2. Place the chicken cubes in a large resealable plastic bag. Pour the marinade over the chicken, ensuring that all the pieces are well coated. Seal the bag and refrigerate for at least 2 hours, allowing the flavors to infuse the chicken.
    3. Preheat your grill to medium-high heat.
    4. Thread the marinated chicken, bell peppers, onion, and cherry tomatoes onto the soaked wooden skewers, alternating the ingredients to create colorful and flavorful skewers.
    5. Once the grill is hot, lightly oil the grates to prevent sticking. Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
    6. Remove the skewers from the grill and let them rest for a few minutes before serving.
    7. Serve the tangy grilled chicken skewers with your favorite side dishes, such as a fresh green salad or grilled corn on the cob, to complete the summer feast.
